INGREDIENTS:

  • 2 cups baby potatoes
  • 1 Tbsp olive oil
  • Cajun spices (combine 1 tsp onion powder, 1 tsp garlic powder, 1 tsp paprika, 1 tsp dried thyme, 1 tsp cayenne, salt and pepper)
  • 1 cup shredded parmesan

INSTRUCTIONS:

  1. Preheat oven to 425 degrees.
  2. Toss potatoes in olive oil, then cajun spices – followed by half of parmesan.
  3. Add potatoes in an even layer to a baking dish or sheet. Top with remaining parmesan.
  4. Bake for 25 minutes.
