INGREDIENTS:

  • 1 sweet potato
  • 3 Tbsp crushed graham crackers
  • 1 Tbsp coconut oil – melted
  • 1/8 tsp cinnamon
  • Dollop of coconut cream for serving

INSTRUCTIONS:

  1. Use a fork to poke holes all around the sweet potato.
  2. Place it on a microwave-safe plate and microwave for 6-8 minutes or until soft and tender.
  3. Cut halfway deep through the center of the sweet potato and pinch the sides to open.
  4. Combine the crushed graham crackers, cinnamon and coconut oil and add the mix into the sweet potato. Microwave for another 30 seconds.
  5. Serve with a dollop of thick coconut cream found at the top of a can of coconut cream.
