INGREDIENTS:

  • For the Carrot Cake:
    • 1/3 cup pancake mix
    • ¼ cup milk
    • 1 Tbsp sugar
    • 1 Tbsp coconut oil
    • 2 Tbsp shredded carrots
    • 1/8 tsp cinnamon
  • For the Frosting:
    • 1 oz cream cheese
    • 1 tsp sugar
    • Splash of milk

INSTRUCTIONS:

  1. Combine all Carrot Cake ingredients into a mug.
  2. Microwave for 60 to 90 seconds or until the cake is set.
  3. Combine all frosting ingredients in a small bowl. Top carrot cake with frosting and enjoy!
