INGREDIENTS:
- 1 sweet potato
- 3 Tbsp crushed graham crackers
- 1 Tbsp coconut oil – melted
- 1/8 tsp cinnamon
- Dollop of coconut cream for serving
INSTRUCTIONS:
- Use a fork to poke holes all around the sweet potato.
- Place it on a microwave-safe plate and microwave for 6-8 minutes or until soft and tender.
- Cut halfway deep through the center of the sweet potato and pinch the sides to open.
- Combine the crushed graham crackers, cinnamon and coconut oil and add the mix into the sweet potato. Microwave for another 30 seconds.
- Serve with a dollop of thick coconut cream found at the top of a can of coconut cream.
