INGREDIENTS:
- For the Carrot Cake:
- 1/3 cup pancake mix
- ¼ cup milk
- 1 Tbsp sugar
- 1 Tbsp coconut oil
- 2 Tbsp shredded carrots
- 1/8 tsp cinnamon
- For the Frosting:
- 1 oz cream cheese
- 1 tsp sugar
- Splash of milk
INSTRUCTIONS:
- Combine all Carrot Cake ingredients into a mug.
- Microwave for 60 to 90 seconds or until the cake is set.
- Combine all frosting ingredients in a small bowl. Top carrot cake with frosting and enjoy!
