INGREDIENTS:
- 10-12 baby potatoes
- 1 tsp olive oil
- 1 clove garlic – minced
- Chopped parsley
- Salt and pepper to taste
INSTRUCTIONS:
- Prick all potatoes with a fork.
- Toss potatoes in remaining ingredients.
- Place potatoes in a single layer on a large microwave-safe plate.
- Microwave for 9 to 11 minutes or until tender.
