INGREDIENTS:

  • 10-12 baby potatoes
  • 1 tsp olive oil
  • 1 clove garlic – minced
  • Chopped parsley
  • Salt and pepper to taste

INSTRUCTIONS:

  1. Prick all potatoes with a fork.
  2. Toss potatoes in remaining ingredients.
  3. Place potatoes in a single layer on a large microwave-safe plate.
  4. Microwave for 9 to 11 minutes or until tender.
