INGREDIENTS:
- 8 oz chicken sausage
- 8 oz tortellini
- ½ cup chopped onion
- ½ cup chopped celery
- ½ cup chopped carrots
- 2 garlic cloves – minced
- 2 cups chopped spinach
- 6 cups chicken broth
- Parmesan cheese for serving
INSTRUCTIONS:
- In a medium pot, brown chicken sausage with oil. Remove it from the pot.
- Add onion, celery, carrots and garlic – saute for 2 minutes.
- Add chicken broth and bring it to a boil. Reduce heat to a simmer and cook until vegetables are tender (about 6-8 minutes).
- Add tortellini, turn up heat and boil according to package instructions.
- Add spinach and sausage back in and cook for another minute.
- Serve with parmesan.
