INGREDIENTS:

  • 8 oz chicken sausage
  • 8 oz tortellini
  • ½ cup chopped onion
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • 2 garlic cloves – minced
  • 2 cups chopped spinach
  • 6 cups chicken broth
  • Parmesan cheese for serving

INSTRUCTIONS:

  1. In a medium pot, brown chicken sausage with oil. Remove it from the pot.
  2. Add onion, celery, carrots and garlic – saute for 2 minutes.
  3. Add chicken broth and bring it to a boil. Reduce heat to a simmer and cook until vegetables are tender (about 6-8 minutes).
  4. Add tortellini, turn up heat and boil according to package instructions.
  5. Add spinach and sausage back in and cook for another minute.
  6. Serve with parmesan.
